ICE WATER CHOCOLATE CAKE




Cook Time: 30 minutes
Total Time: 30 minutes

Ingredients:

* 3/4 cup butter
* 2 1/4 cups granulated sugar
* 1 1/2 teaspoons vanilla
* 3 eggs
* 3 squares unsweetened chocolate, melted
* 3 cups cake flour
* 1 1/2 teaspoons soda
* 3/4 teaspoon soda
* 1 1/2 cups ice water

Preparation:

Cream butter, sugar and vanilla. Add eggs, beating well after each addition. Add melted chocolate; blend well. Sift together dry ingredients and add alternately with the ice water. Pour into three 9-inch layer cake pans. Bake at 350° for 25 to 30 minutes. Cool 5 to 10 minutes and remove from pans. Cool thoroughly before frosting.

Chocolate Frosting

* 1/2 cup shortening
* 8 cups sifted confectioners sugar (about 2 pounds - sift before measuring)
* 1/4 cup half and half cream
* 2 egg whites (use Just Whites or other egg white substitute)
* 1 tablespoon vanilla
* 4 ounces melted chocolate

Blend all ingredients. Beat on high speed until light and fluffy.
